I am glad you are feeling the freedom of tearing through some animal fat.  I would caution to be wary of the meats source.  Get good quality meats and eat everything including the bone marrow!

As for Beef tallow, my best bet would be your local butcher or google it, i am sure a local farm could help you.</description>

		<description>I&#039;m just dipping my toes in the (greasy) water regarding the sat v. unsat fats...at 51 it&#039;s been difficult for me to wrap my previously brain-washed mind around this new (but admittedly very exciting) concept...and the idea that I can &quot;come out&quot; and eat my steaks with their fat sort of makes me tremble in anticipation. 

I do have a question...where can I get beef tallow (is that the same as lard?) and duck fat? Any sources would be appreciated.

BTW, I love this post, I know I need to work harder in all areas, including rest.

 I was eating a ton of almonds, walnuts, and pecans a couple months ago. I&#039;ve since switched to more beef tallow, bacon/duck fat, avocados, olive oil, and coconut based fats. 

I suspect a large part of the benefit from this switch is how easy it is to eat a ton of almonds. I could sit down and hammer back 90 almonds in 10 minutes. It is pretty tough to do that when you are dealing with bacon fat.</description>
